"Top Chef" Whole Wheat Tortilla Chips

1 pack of large whole wheat tortilla
1/4 cup olive oil
2 tbsp ground ginger
2 tbsp minced thyme
1tbsp cracked black pepper
Salt to taste
1). Preheat oven to 375°F.
2). Cut each tortilla into 8-12 pieces depending on size. Drizzle with olive oil and dust with ginger, thyme, black pepper and salt. a
3). Lay chips flat on a sheet pan lined with a silpat (silicone non-stick baking mat) or foil; top with another silpat and place another sheet pan on top so chips cook flat.
4). Bake in oven for about 8-12 minutes.
